ABOUT US

My name is Lawrence (Larry) Jackson. I am the son of Lillian Sheakley and Paul Jackson, Sr. I was born and raised in Seattle, Washington. I raised three amazing, hard-working children who are adults now. I spent the last 25 years in the social services field working in various positions. I was a case manager with the state of Alaska and tribal organization that focused on children who were abused and or neglected. I was a corrections officer for the state of Alaska and A correctional center in Arizona. I worked with people who are diagnosed with a severe mental illness. I have been a foster parent and worked at homeless shelters for teens.

I learned many lessons throughout my career. I learned patience, compassion, and consistency by connecting with people. My interactions with people helped me grow professionally and personally. People have value no matter their situation or circumstances. My life experiences taught me things like failure, resilience, and competition. Without failure, I wouldn’t try harder to make a difference or improve a situation. Without resiliency, I wouldn’t know how to get up and keep trying no matter what. Without competition, I wouldn’t know the taste of success and failure.  

This is the birth of Tick Tock Taco. I will reach people with my food truck and begin my new venture. I will serve quality, comfort food to curb their hunger. A couple of examples of comfort food that is on my menu are Fry Bread Bites. Fry Bread bites were created after many failed attempts at making the traditional size fry bread for Indian Tacos. Fry Bread Bites offer the same taste, but in a new improved size for convenience and carrying. It will have all the familiar toppings, like meat, lettuce, cheese, tomatoes, sour cream, jalapenos, or guacamole, but be in a bowl for easier handling. Breakfast Bowls will include Fry Bread Bites, eggs, sausage or bacon, topped with gravy. Another savory dish is called Loco Moco. Loco Moco is rice, hamburger patty, egg topped with gravy. Tick Tock Taco will also have food items for my customers dogs. They will be able to bring their dog some food from my truck specially made for them. As my customer base grows, I will add more items to my food truck.
